Baked Norwegian Cod with Tomatoes, Artichoke and Capers

  • Cut the peppers in half and remove the stem, membranes and seeds. Place them on a baking tray with baking paper, cut side down. Put them into oven under grill, and grill the peppers until the skin blisters and gets black spots. Take them out, cover with plastic and let cool slightly. Peel off the skin and cut the peppers into strips.
  • Slice the onion thinly. Add a layer of onion and peppers in an ovenproof dish. Stir together tomato paste and chili paste and spread the mixture on top. Cut artichokes in wedges and put them in along with the tomatoes.
  • Cut the Norwegian cod into serving pieces. Place on top of the vegetables and sprinkle with salt, pepper and capers. Drizzle over a little olive oil and bake in the oven at 200 ° C for about 15-20 minutes, until the fish is cooked through and the sauce bubbles.
  • Serve with olives, bread or boiled potatoes on the side.
