Preparation
- Preheat the oven to 200C/180C fan/ gas mark 6.
- Place the potatoes in a large roasting tin (big enough to hold everything) with the peppers and onion, pour over the olive oil and give it all a good mix. Roast for 20 minutes.
- Add in the chorizo, olives, tomatoes and wine and cook for another 10 minutes.
- Dust the cod with the paprika then nestle it into the vegetables with the lemon wedges and bake for 10-12 minutes.
- Season and serve scattered with the parsley.
