Spicy Cajun Fish Finger Brioche Roll

Get inspired by the American kitchen and make your own fish fingers with Norwegian cod for dinner. Its actual easier and quicker than you think! Serve it with your own, homemade Ranch dressing on a delicious brioche bun.

Ranch dressing

  • Chop the gherkin and shallot finely. Crush the garlic.
  • Combine all the ingredients together in a mixing bowl and season with a little salt and leave to one side.

Spicy cajun fish fingers

  • In a small mixing bowl, mix the flour, Cajun seasoning and season with a little salt and pepper. Pour the beaten egg and breadcrumbs into separate dishes.
  • Gently toss the strips of fish in the seasoned flour until evenly coated, then dip into the beaten egg and toss in the breadcrumbs. Transfer to a large plate and leave to one side.
  • Heat the oil in a heavy based frying pan, add the fish fingers in small batches and fry for 5 minutes, turning occasionally, until golden brown and crisp on all sides. Remove and drain on a piece of kitchen paper.
  • Fill brioche buns with salad leaves, a couple of fish fingers and a dollop of ranch dressing before serving
