Thai-style Norwegian cod

This roasted cod is coated in aromatic sauce and surrounded by greens. Don’t be put off by the ingredients list, this healthy dish is super simple to prepare.

  • Pre heat the oven to 180 degrees. Put the cod in a ovenproof dish and season.
  • Chop the chilli and garlic and mix together with soy sauce, fish sauce, lime juice, sugar, sesame oil and 2 tbsp water.
  • Spread half the sauce over the cod and roast in the oven for 20 minutes, until the cod flakes.
  • Meanwhile, cook rice noodles according to the description on the package.
  • Add a litte oil to a frying pan and cook the vegetables for 2 minutes over high heat. Add a splash of water in, and let it steam before mixing in oyster sauce and sesame seeds.
  • Serve the cod with noodles, vegetables, and top with the remaining chilli-garlic sauce, peanuts, finely chopped spring onion and coriander.
