Norwegian Prawn Cocktail
A classic prawn cocktail is a much-loved starter and is making a welcome comeback on dinner tables. This simple version combines sweet Norwegian cold water prawns with crisp salad, a lightly spiced dressing and fresh herbs for an elegant starter that's perfect for entertaining.

Prepare the Dressing
- In a bowl, mix together the mayonnaise, soured cream, ketchup and sriracha.
- Season with lemon juice, salt and black pepper to taste. Chill until ready to serve.
Prepare the Prawns and Salad
- Peel the prawns, reserving a few whole prawns for garnish.
- Finely shred the lettuce and divide between four serving glasses.
- Finely dice the cucumber and red onion and scatter over the lettuce.
- Spoon some of the dressing over the salad.
Assemble
- Arrange the prawns on top of the salad.
- Garnish with the reserved prawns, fresh dill and a lemon wedge.
- Serve with the remaining dressing on the side.
Chef's Tips: If you can't get whole prawns, pre-peeled ones also does the trick! If you are using whole prawns, don't throw away the prawn shells. They can be used to make a flavourful shellfish stock, perfect for soups and sauces.
