Norwegian Salmon Fish Tacos

Prepared in a traditional Mexican-style marinade, these baked Norwegian Salmon tacos are topped with fresh vegetables, guacamole and lime sour cream. Easy to make and so good.

Preparation

  • Preheat oven to 190°C/375°F.
  • Cut salmon into small cubes. 
  • Shred the lettuce and chop the tomatoes.
  • Combine half the lime juice, cumin, garlic powder, olive oil, paprika, cayenne pepper, oregano and pepper in a medium bowl.
  • Place salmon in a baking dish and pour marinade over salmon. Marinate for at least 20 minutes or up to 2 hours refrigerated.
  • Season salmon with salt, cover with lid or foil and bake for 12-15 minutes, or to desired temperature. Combine sour cream with lime juice.
  • Serve salmon with warm tortillas, shredded lettuce, diced tomatoes, guacamole and lime sour cream.  

Serving Suggestion: If you want, you can serve with white rice and black beans for more bulk to your tacos.
