Preparation
- Preheat the oven to 180ºC.
- Brown the skrei fillets, skin side down in a frying pan for 8 min. Then place in an ovenproof dish and bake for 5 min in the oven.
- For the concasse, scald the tomatoes, peel them, remove the seeds and dice them. Add 100 g butter to the frying pan and heat until it starts to turn brown. Add the garlic, ginger, capers and soy. Turn off the heat and add in the tomatoes, chives, salt and pepper.
- For the mashed potatoes, heat the butter in a saucepan. Once it has melted, add the cream then the cooked potatoes. Mash and season.
- To plate, start with the mashed potatoes as a base, then place the skrei on top and decorate with the concasse. Sprinkle with pepper. Finish with a drizzle of olive oil.
